Anyway, so since I'm not eating fast food I have been more inclined to try and find some quick dinners that John and I can make when we would normally drive to McDonalds. This last Saturday night I had the pleasure of introducing John to Greek Food which is a favorite of my Moms. This potato recipe is hers that she made from scratch and they are delish paired with a flatbread gyro. SO! On to the recipe! (Just so you know I'm a dump cook so measurements are rare.)
Flat Bread Gyro with Greek Potatoes with Tzatziki sauce

Greek Potato Ingredients :
olive oil
peeled, chunked potatoes or yams
peeled, chucked onion
kosher salt and pepper
splash of water
Greek seasoning
squeeze of fresh lemon or lime juice
Tzatziki Sauce Ingredients :
1/2 c sourcream or plain Greek yogurt
2 sm cloves fresh garlic, grated
good size pinch dried spearmint
1/2 to 1 tsp thick raw honey*
Directions :
Saute potatoes and onions in olive oil with salt and pepper for several minutes. Add good splash of water and cover, reduce heat and cook until potatoes are almost done and are tender to a fork.
While waiting mix all topping ingredients together.
Add Greek seasoning and lime/lemon juice, stir to moisten. Leave uncovered until almost all the liquid has evaporated - watch carefully 'cause when the pan runs dry it will burn. Transfer to serving plate. Dollop with the thick, creamy tzatziki sauce.
* A note on thick honey: thin honey is great for spreading over toast or beignets but it's too watery for this. Raw honey has a much thicker consistency and will make for a better sauce.
Gyro Ingredients :
flat bread or pita shells
finger steaks or lamb
greek seasoning
spinach
feta cheese
tzatziki sauce
Directions :
Gyros are pretty self explanatory its like a Greek burrito or taco. You can use any veggies you would like, and there are a limitless combinations. What makes it a Gyro is the greek seasoning on the meat, the feta cheese, and of course the tzatziki sauce. You can put as much or as little of anything you want on these. Just saute or grill the meat in a pan until cooked. I like to sprinkle the same greek seasoning used in the potato recipe for the seasoning but just salt and pepper would work great too. I like to spread the tzatziki sauce on the bread like a base and pile everything in and then put a couple dollops more on the top!
Like I said you can pretty much let your culinary freedom reign supreme as you create this part of the meal!

You have such a zest for life and I love your attitude! As I read through the posts on your home page I am realizing real quick how much we have in common like how much we love our hubby's, how much we enjoy reading and cooking and I just LOVE your writing style!
This recipe looks SO yummy and one that I will definitely try out as we have been thinking we want to try Greek Yogurt in place of sour cream in our recipes. We had the best Greek Gyros in Boise at "Art in the Park" a few years ago and we have never tasted anything as yummy as those.
