Hello fellow bloggers! I have some exciting news! John and I are moving! We have spent the past 7 months living with my In-laws here in NoVa. And I am ecstatic to announce that John and I got a lease approved on a 2 bedroom 2 bath condo in Potomac Falls, VA! I am so excited to be out on our own again. Living here with Johns parents has definitely helped us to save and pay off debt, but I'm ready to be with my husband on our own again, and little Carlos too! We got so lucky and found a place that is close to work still and that we both absolutely love and now I am just itching to move into it and decorate!
I will post pictures of the place once we get settled! Yay for moving forward!

Getcha game face on!

It's been quite awhile since I posted a recipe so in light of the impending Super Bowl, I've decided to post my must have Super Bowl recipe. Enjoy and may the best team win!

Touchdown Chicken

Ingredients:
chicken breast or tenders
lays potatoes chips
eggs
salt and pepper

Instructions:
Line a baking sheet with foil and apply a light coating of Pam or cooking spray.
Clean the chicken and chop into small bite size pieces. Beat eggs and salt and pepper to create a egg wash. You can add Franks's hot sauce to the egg wash for a little kick! Smash the Lays potato chips into small pieces.
Now take the pieces of chicken coat them in the egg bath and then roll and coat them in the potato chips. Put them in rows onto the baking sheet and bake at 350 F for about 10-15 minutes or until the chicken is cooked through.

Now if you want to score that extra field goal try this dipping sauce to go with it!

1/2 cup sour cream and some worcestershire sauce to taste with a sprinkling of paprika!

Have a little Glitz with your Glamour

VSI does the Holidays a little differently. We have our Holiday party in January, so that all the Docs can still take time for Christmas and not miss the big she-bang. Let me tell you this was an awesome way to keep the Winter Blues off.
The theme for this years party was Old Hollywood Glamour, black and white attire.
It was such an awesome party and the company did a great job. There as a cocktail hour, and then we had a sit down dinner and of course some speeches. After dinner was dancing and gaming. They brought in these huge casino tables and gave everyone 25,000 in funny money to go play games with. It was so interesting and fun to see everyone out of work mode and more relaxed. One of our Doctors and his lead PA even performed a rap song for us.
I may have some really bad days, and some really crazy experiences at my job, but I love it and I love the people I am lucky enough to work with!! Hope you enjoy the pictures from our Old Hollywood Party!
